Wine, beer, anything you want. It doesn't technically have to be alcoholic, but tradition dictates that it ought to be, and whatever it is should be their favorite drink, or at least something they liked.
You get together the people that know them best, and you all drink and tell stories about them, and you toast the guy who isn't there to drink with you— he gets a seat, and a serving, of course, even if he isn't there to use either.
Then, when the party's over, and it's time to go, you take their cup, and you pour it out in their honor. Ideally not directly onto the floor of whatever bar you've taken over, but... people are usually pretty far gone, by then. Most bars are pretty forgiving for Alliance soldiers who're grieving.
Real old tradition, though. Goes back to the start of the human race, I've heard.
